Our Story
About Fernando:
Like all cooking enthusiasts, I started as a child, accompanying my mother and grandmothers in the kitchen. I was amazed at how fresh produce came out of a grocery bag and the smell of different chiles when they were roasted to turn them into delicious dishes to eat at home.
My enthusiasm led me to work in successful restaurants and hotels in my country. When I arrived in the USA 30 years ago, I worked in different kitchen areas and focused on healthy food, taking advantage of the healthy side that traditional Mexican cooking methods provide.
My training is based on the culinary traditions of my country, honoring and reproducing them in my kitchen. The mixture of different chiles roasted together is what gives it its authentic flavor!
About Andrés:
I’m a young professional with over 15 years of experience in the hospitality industry all over the world, such as Florida, Nevada, California and finally decided it was the right time to support our family business.
I’m so in love with the mexican culture that I wanted to expand flavors of the food even more… and I thought wine pairing was the key for success. So I became a certified Sommelier from the “Court of Master Sommeliers” and performing as a beverage director ever since then. After achieving the learning process of wines I dedicated to learn every single detail of Mexican Food to be able to incorporate wine and food pairing in our family business. Who thought that German wines, because of the sweetness, will lower down the spiciness of Mexican Food?
About Ana:
With over 10 years of experience in the service industry, Ana is a dedicated hospitality professional. As Front of House Manager, she ensures every guest enjoys exceptional service and a memorable dining experience. When not at Guajillo’s, she enjoys creative activities with her daughter.
About Edgar:
I’ve cooked with my dad for 18 years now, he’s taught me everything I know about our food and heritage.
I strive for consistency in the quality of our food and the service I give our guests to make them feel at home. I’ve always felt that my job is more than cooking and taking orders at a table…We open the doors of our house (Guajillo’s) to anyone and everyone. Our family and what we cook brings people together and that’s what it’s all about. Bringing all of us together for a meal!
